Late Night Indulgence

YUMMY!!!

 

I had to share!! Today my husband made these delicious red velvet cupcakes with chocolate frosting and little heart sprinkles for me and our son for Valentine’s Day. These are the most moist cupcakes I think I have ever eaten. He made these early this morning and it is now nearly 24 hours later and they are still so moist and yummy. Are you like me sneaking into the kitchen in the middle of the night looking for something to snack on. What leftover Valentine’s day treats are you eating? Well Like I said I just wanted to share because they looked so cute and they just tasted so wonderful. Just if you are wondering this was made with the Betty Crocker red velvet cake mix and chocolate frosting is also Betty Crocker and just added and extra teaspoon of oil.

Hi everyone! I am completely delighted to have this opportunity to reach out to so many people and share crafts, as well as working with Stephanie in brainstorming and giving you great projects ideas! Because I am so delighted to be here, I thought it would be fitting to give you one of my favorite delights…

Oreo Torte Delight

1 pkg Oreos crushed (save 1 cup for topping)
1/2 cup (1 stick) butter, melted
8 oz cream cheese
1 cup powder sugar
16 oz cool whip
5.9 oz box instant chocolate pudding

Make crust by mixing all but one cup crushed Oreos and 1 stick of melted butter and pressing into a 9×13 pan. Combine softened cream cheese, 8 oz cool whip, powder sugar and blend well. Smooth over crust. Make instant chocolate pudding according to directions on package. Smooth over cream cheese mixture. Take remaining 8 oz cool whip and spread over top of pudding. Garnish with crushed Oreos. Refrigerate several hours or overnight before serving.

YUMMY!! A bit messy and very sinful, next time I’ll have a healthier recipe!

Slow Cooked Bone-In Turkey Breast

This is the easiest way to make your holiday bird so you can spend your time with your family and less time in the kitchen.

 

I wish I had a photo for this recipe however I forgot. I promise you though, this is one of the tenderest turkeys your will ever eat. I love turkey and chicken, However I have never had turkey like this before. If you have a Bone-In Turkey Breast trust me this is the recipe for you!!

 

My Husband has just recently bought us a 7 qt. Crock-Pot Slow Cooker. I love it!! There is so much you can do with a slow cooker, but I would have never have thought to put a turkey in it. One night  I had the worst craving for turkey and mashed potatoes, so Jason got up took the crock pot out and told me it would be ready by morning. Sure enough when I woke up in the morning the house was filled with the lovely aroma of a cooking bird. My mouth just started to water. Around 10 am I was eating the most tender turkey I have ever had. I told him I had to share this recipe with everyone. So he wrote down what he did. Really it’s so easy that we slept though most of the cooking time.

ingredients Needed:

  • 6-7 Qt. crock Pot
  • 7# Bone-In Turkey Breast
  • 6 cups of Apple Juice
  • 1/2 cup Apple Cider Vinegar
  • 1 tsp Liquid Smoke
  • 1/2 cup chopped Onion
  • 1 stick of salted Butter
  • 1/2 cup chopped Celery

Directions:

  1. Combine all the ingredients into the crock-pot
  2. Set on low for 10 hours
  3. After the 10 hours pick out the large chunks of meat and separate the meat from the bone.
  4. Strain the liquid and save for the gravy.

Gravy Directions:

  1. Add Rue to the strained liquid.(Rue = 1/2 cup of flour and 1/2 cup of butter.
  2. Heat to a boil. Then turn off.
  3. If making your own Rue saute in a pan untill golden brown. Then turn off.

That is it. I hope you enjoy this recipe as much as my family did. This may not be the healthiest way to make turkey, However its the easiest and it tastes so GOOD!!

Everyday thousands of families sit and ponder the most infamous question….. “Whats for dinner?” This is something my Husband hears all to often in my home. However with his work schedule I have had to start taking over some of the bigger meals.

So many people stick up their nose to eating healthier because of the cost of the food or the amount of time it takes to prepare a meal. In my home my family has no choice but to eat as healthy as possible due to my illness. After sometime my Husband and I were able to come up with a list of meals that I was able to eat and are easy to make. It does help that my Husband is a chef and knows what foods taste good together and what is in the meals in terms of high sodium, fat, and other items I have to look out for in my diet. And since we are a family on a budget we definitely have to keep in mind our food costs.

Since I know there never seems to be enough time the day My husband and I would like to start sharing with you some of our favorite meals that are either quick to make or meals that take little tending time to. I hope you enjoy these meals as much as we did. We will also share our favorite not so healthy meals, because it would just be a crime not to share them with everyone. Since we started this blog around the holiday season you might find that some of our first few recipes are probably not the healthiest, However I promise you they will taste so good.
